Producer’s notes

The winery calls Dimchurch the more fruit forward wine of its Hoffmann project. The grapes come from old vines at Ebenezer in the northern Barossa Valley, where the grower Adrian Hoffmann selects individual parcels; they are destemmed gently and vinified in small batches, and the wine is matured in barrel for three to four years or more. 325 dozen were made in 2014. The winery recommends two to four hours in a decanter before drinking.
