Chapoutier describes vines of 80 years on very poor granite soils at the top of the Hermitage hill, around the chapel, in the place called L’Ermite. The grapes are picked late by hand, fully destemmed and fermented in concrete tanks for about four weeks, and only the free run juice goes into the wine.
