Salon
Salon is the rarest of the great Champagnes. Founded by Eugène-Aimé Salon in the early 20th century, it makes a single wine, a Blanc de Blancs from Le Mesnil-sur-Oger, and only in the finest years: a little over 40 vintages in more than a century. It is released only after about ten years on its lees.
Salon comes entirely from Chardonnay grown in Le Mesnil, much of it from the house's own one hectare plot, the Jardin de Salon, with the rest from long term growers in the village. The wine is made without malolactic fermentation, which gives it the tension to age for decades. The house belongs to the Laurent-Perrier group, with Delamotte as its sister house.
