Bruno Paillard
Bruno Paillard founded his house in Reims in 1981, reportedly selling his vintage car to fund it, which makes it one of the youngest of the great Champagne houses. He was among the first to print the disgorgement date on every bottle, and his daughter Alice now runs the house with him.
Paillard owns vineyards across grand and premier crus, uses low dosage and ages its wines long on their lees. Nec Plus Ultra, made only in exceptional years, comes from grand cru vineyards, ferments in small oak barrels and ages for about a decade before release.
