Bollinger
Bollinger is a family owned house in Aÿ, founded in 1829, famous for its rich, Pinot Noir led style and as the Champagne of James Bond. Its R.D., for récemment dégorgé, is a vintage Champagne aged for many years on its lees and disgorged just before release, a style the house pioneered.
Bollinger grows much of its own fruit, ferments a large share in old oak barrels and keeps its reserve wines in magnums. Its rarest wine, Vieilles Vignes Françaises, comes from ungrafted Pinot Noir vines, and the range runs from Special Cuvée to La Grande Année and R.D.
